There is this weird glitch where when i get hit running. i'll freeze then keep running in that direction despite hitting the opposite arrow

is okay but how the hell do i get souls?

Once you earn your first billion gold you should get your first soul on reset (once you earn that billion, you'll see all the other options appear)
